Here's the recipe that I used for the brownies on Friday night. I found it on the CrossFit Boards.
6 Tbsp oil
2 eggs
1/2 c honey (I used 1/2 c agave nectar instead)
1/2 c almond or pecan meal (I used almond meal)
1/2 c cocoa or carob powder (I used unsweetened cocoa powder)
1/4 c arrowroot flour
Bake at 350 for 15-20 minutes.
If you use a smaller pan and the batter is poured in thick, it comes out more like cake than like brownies. I used a 9x9 pan for mine.

ReplyDeleteWas just going to ask if you paleo guys ever have cheats and eat things like bar food or desserts and also if you ever drink alcohol. Started crossfit fundamentals recently and have been following zone. Trimming down but wondering if you guys ease up at some point or follow the rules 100% of the time?

ReplyDeleteI made these with walnut oil, half honey half agave, and coconut flour in place of both the almond meal and the arrowroot flour. They are not bad, but I will say that when I added the 1/4 cup of coconut flour in place of the arrowroot flour, it may have been too much. The texture was such that I had to really pat the mixture into the pan to cook it. In other words, it did not fold into the pan in a semi-liquid form. Maybe the coconut flour was thicken than either arrowroot flour or almond meal. I'm not sure since I've not used them before. In any case, I still liked them, and felt much better knowing that they had no table sugar or processed flour in them.
ReplyDeletedelicious and tasty and since I am highly allergic to gluten and dairy, after eating this I had no bloating or stomach cramps. This is just a milestone in my life...being able to eat wonderfully tasting goodies without the painful after affect.
